Risotto with chicken and frozen vegetables

Quick family dinner option. Healthy and delicious! There are many varieties of risotto in Italian cuisine. I suggest cooking this dish with frozen vegetables. Simple and convenient. I bought a bag of frozen vegetables, took a piece of chicken fillet, a glass of rice. Half an hour - and the dish is ready.

    Spread in a frying pan, lightly fry.

    We take out a mixture of frozen vegetables from the freezer. I like this dish most of all with a Mexican mixture: bell pepper, carrots, string beans, peas, corn, celery, onions. You can take other versions of vegetable mixtures.

    Put the frozen vegetables to the chicken, stir, fry for 5 minutes.

    While the vegetables are being fried, we wash the rice, throw it into a colander, let the water drain and pour it into the pan with the chicken and vegetables. Mix it up. It is better to take round rice, not steamed. Salt (I put 1 tsp. without a slide), pepper, add a pinch of basil, marjoram, oregano. You can take a mixture of Italian herbs, but my family does not like rosemary, which is present here, and I use only such seasonings.

    Pour 2 cups of hot water or broth. Close the pan with a lid, turn down the heat. Simmer until the rice is ready, stirring occasionally. Add salt if necessary.

    I have 15-20 minutes for the rice to be fully cooked. When the rice is ready, you can sprinkle with grated hard cheese, mix. You can sprinkle cheese on the finished dish already when serving. My family prefers risotto with chicken and vegetables without cheese. In Italian cuisine there is also such an option.
