Combine eggs with sugar, salt, beat well. A portion of sugar is selected to achieve a neutral taste, because then the filling in pancakes can be both meat and jam. Add the remaining components and mix well, in order to avoid the appearance of lumps and so that the mass is homogeneous. 
Take, in addition to milk, and 200 ml of water. Put the dough in a warm, windproof place for about an hour. When it increases by 2 times in volume, mix it, and put it to rise again. And now we don't interfere with it!
Preheating the frying pan, smear it with a little oil. Scoop the dough with a ladle, pour it into the pan and let it spread evenly. When you see that its surface has dried up, turn the pancake over and fry it with another side. Ready-made pancakes are served with any filling
