    While the tubes are cooling, let's do the cream. We separate 2 egg whites. Yolks, including the yolk left over from the tubules, can be used for other purposes. Beat the proteins with a mixer until the volume increases, add a little citric acid for the stability of the proteins. Without stopping whipping, add sugar in small portions. Beat until stable peaks. At the end, we introduce vanillin.
