Hearty, tender and very tasty zucchini pancakes! The recipe came to our family from the program "Relish", which was still led by Makarevich, and uncle Kolya Drozdov, the host of a very good and kind program "In the world of animals", told about it. He has been a vegetarian for many years and the recipe is also vegetarian, he cooked zucchini pancakes even without eggs. But I am completely incapable of such a feat, so I still use eggs.

We take young zucchini, very tender and literally defenseless. They are so tender that I don't even peel the skin, although I recommend it. I rub them on a coarse grater. Of course, you can skip it through a meat grinder, but it will look strange later, so through a grater - it's the most. The main thing is that there were no seeds. We look at how much juice has come out, if it seems to you that there is too much, we drain it (everything is completely at your discretion). Add a couple of eggs, salt and mix thoroughly. Add flour in small parts and, stirring, bring our dough to the consistency of thick sour cream. I like to add a little crushed garlic, if you think it's spicy, you can add greens to the dough – we look quite exotic. And the pancakes themselves are exotic. Children call them "Green Food", but you can't pull them by the ears. It is better to fry in vegetable oil on both sides, until a crispy crust forms. Spread on a frying pan with a tablespoon, and serve with sour cream.
