Okra stew with chicken

Vegetable stew, but not from the usual products, but exotic! A delicious dish of Creole cuisine. It is perfect for those who want to diversify their menu, fast or are vegetarians. Okra I buy in large stores in frozen form and, frankly, I really liked it. I try different dishes with her - I really like the chicken fillet cooked according to this recipe.

Cooking method

Cooking time: 1 h

1. Cut the chicken meat into medium pieces.
2. Peel and chop the onion. In separate containers, chop garlic, thyme, finely chop jalapeno, small pieces of bell pepper, okra - circles. Chop the green onion, parsley. Cut the tomatoes into cubes.
2. Heat a deep frying pan with a third of vegetable oil.
3. Put the chicken in the pan, fry for 8-10 minutes.
4. Transfer the meat to a plate, add the remaining oil to the pan, as well as: onion, garlic, jalapeno, bay leaf, thyme. Fry for 3 minutes.
5. Add tomatoes, cayenne pepper, paprika, corn, bell pepper. Stir and simmer all together for 5 minutes.
6. Now put okra, green onions, pour in the broth. Add salt and bring to a boil. Simmer over moderate heat for 5-8 minutes.
7. Serve with boiled rice.
