Chicken Gulchehra

From ordinary products, simple, appetizing, for dinner! Chicken gulchehra is an Uzbek dish of chicken meat stewed in milk and sour cream. Chicken, thanks to dairy products, turns out soft, tender, juicy, with a rich sauce reminiscent of bechamel.

    How to make gulchehra from chicken? Prepare the necessary ingredients. You can use any part of the chicken - chicken fillet, thighs, legs. Wash the meat, dry it with paper towels, remove the films, excess fat, remove the skin. Cut into small portions.

    Peel the onion from the husk. Cut into small pieces. To prevent onion juice from irritating the mucous membrane of the eyes so much, rinse the onion and knife with cold water before slicing. If the cutting board is rubbed with a piece of lemon, it will not absorb the unpleasant onion smell. Peel the garlic cloves and pass them through the press.

    In a small container, combine the flour with the milk and mix until smooth so that there are no lumps. If lumps do form, rub the sauce through a sieve.

    Pour vegetable oil with a high smoking temperature into a frying pan and heat it well. You can check whether the oil has heated up well enough in a simple way. Lower a wooden spatula into it, if bubbles have gathered around, then you can start the roasting process. Put the onion with garlic and fry over medium heat until golden brown.

    Add chicken pieces to the pan. Fry everything together for 2-3 minutes over moderate heat.

    Add sour cream to the chicken and mix well. Sour cream can be replaced with cream of any fat content or thick natural yogurt without additives. Remember, the calorie content of the dish will depend on the fat content of the products you use.

    Pour the milk-flour mixture into the pan.

    Add sugar, salt, suneli hops (optional) and pepper. Mix it up. If you decide to add ready-made spices for chicken, be sure to read the composition before using. If there is already salt in the mixture, take this into account when you salt the meat, otherwise you risk over-salting.

    Pour in warm boiled water or pre-cooked chicken broth. The liquid should completely cover the chicken.

    Cover the pan with a lid and simmer the contents over medium heat for about 30 minutes. Before serving, sprinkle the dish with chopped herbs (green onion feathers, dill). Any side dish is suitable — rice, pasta, buckwheat, potatoes or pickled, fresh, grilled vegetables, salads.



Gulchehra dish can be prepared in the form of soup. In this case, more water or broth should be added.

Chicken can be replaced with turkey or any other type of meat at your request. But keep in mind that in this case, the cooking time and calorie content of the dish will change.

Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.

So that during the stewing process the sour cream does not curdle and does not delaminate, pre-mix it with a spoonful of flour in a separate bowl, and then add to the pan. You can replace sour cream with cream of any fat content. But remember, the calorie content of the dish depends on the percentage of fat content of the sour cream or cream you use.
