    Bake the peppers in the oven until brown. If the pepper turns black only on one side, then in the process of baking, turning it over. I buy only green pepper. I once read that all peppers are the same variety, just at different stages of maturity. Green is the youngest and contains the least harmful substances.

    While the pepper is baking, cut all the eggplants, zucchini and 700g. tomatoes. I cut it on a grater like this. If it is not there, then cut it with a knife. Try to cut thinly, so the dish will taste better. Tomatoes on such a grater I could not cut, they were not hard enough, so I cut with a knife.

    Chop the onion and fry in a frying pan until golden brown. You don't have to cut the onion finely, you can make it bigger.

    Peel the baked peppers and seeds. Slice and add to the fried onions. Simmer for 10 minutes.

    Pour boiling water over the remaining 300g tomatoes, peel and slice. Add the peppers and onions to the pan. Simmer until the liquid evaporates.

    In a separate bowl, mix the chopped herbs, vegetable oil (preferably odorless) and salt, pepper. Take the greens you like - parsley, dill, cilantro, basil. You can also add garlic at this stage. Grate 5 cloves on a fine grater. I don't add it because I don't like the smell of baked garlic.

    In the container where you will bake ratatouille, pour the blended vegetables and smooth them out. We begin to collect ratatouille. Place eggplants, zucchini and tomatoes on top of the gravy, alternating between each other. When all the vegetables are collected, pour the herbs with oil.

    Cover with foil and place in a hot 180 * C oven. Bake for 30-40 minutes.

There are many ratatouille recipes. I found this one on the Internet, where it was said that the recipe was taken from an English-language resource, I did not check, because the dish turns out very tasty and I, like that inspector from the cartoon, just experienced euphoria after trying ratatouille!)))
