Lean stew with eggplant

A very simple and quick dish to make! Healthy and delicious! It diversifies the table of vegetarians, is perfect for fasting, for those who follow a diet, as well as a side dish for meat, fish and poultry dishes. Everything is prepared by itself. Just chop the vegetables.

    Mustard seeds and mustard powder are mixed with 2 tablespoons of boiling water and stirred. We give it a couple of minutes to infuse and swell.

    Add honey, mix and set aside until necessary.

    In a large saucepan with a thick bottom, put the eggplant cut into semicircles, the celery root cut into strips and the paprika cut into strips. Sprinkle with your favorite seasonings, fill with water, cover with a lid and put on the fire to stew. After boiling the water, remove the fire to medium, shake the contents in the saucepan a couple of times. Simmer for 10-15 minutes.

    Add the beans, previously cooked mustard paste and soy sauce. Mix it up. Simmer under the lid for another 10 minutes.

    Turn off the fire. Sprinkle with chopped herbs, mix and let it brew under the lid for another 10 minutes.
