Potatoes for this dish need young, not very large, but not small, smooth, with a small number of eyes and about the same size. The Red Scarlet variety with red peel and yellow flesh is well suited for baking. It is baked quickly enough and does not fall apart. Smoked bacon or raw meat is better to buy sliced. It will take about 6 thin strips.

If the potatoes are not ready, the bacon is well browned, cover the mold with foil. You can serve potatoes with fresh vegetables. Or prepare the sauce: combine 3 tbsp sour cream with 1 tbsp olive oil, 1 tbsp lemon juice and 1 tsp granular mustard. Mix or whisk in a blender for a more homogeneous consistency.

If you use ready-made spice mixes, be sure to read the composition on the package. Often, salt is already present in such mixtures, take this into account, otherwise you risk over-salting the dish.
