    How to make beef and pork cutlets in the oven? Prepare all the necessary ingredients. It is better to make the stuffing yourself. Take the ratio of pork and beef at your discretion. From the spices I took paprika, black pepper, hops-suneli and nutmeg.

    Cut the crust from the loaf, cut or break it into slices, pour water over it. Leave for 5 minutes, then drain the water and squeeze the loaf well. If there is a lot of liquid left, the minced meat will spread and you will not be able to form a cutlet. Chop the soaked loaf with your hand or fork into a homogeneous mush.

    Peel, rinse and chop the onion in a meat grinder or grate.

    To knead the minced meat, take a large deep bowl with a rounded bottom. Put the minced meat, loaf, onion, salt and spices into it. Wash the eggs with soap, dry with a towel or napkin and break them into a bowl.

    Thoroughly knead the minced meat for the cutlets. If the minced meat is too dry and it is difficult to knead, add a little boiled cold water and continue to knead. It should be soft and tender, but not watery.

    Turn on the oven to preheat to 200 degrees. After wetting your hands in warm water, form minced cutlets. For one cutlet, I took about 100 grams of cutlet mass. From the specified number of products, I got 16 cutlets. Grease the baking sheet with vegetable oil and put the cutlets on it. You can spread them almost tightly to each other, since they will become smaller in size during the baking process.

    Bake in a preheated oven to 200 degrees for 30-35 minutes on the top-bottom mode until a golden crust appears. Choose the exact time and temperature according to your oven. As soon as the cutlets are browned, take them out of the oven and remove them from the baking sheet so that they do not become dry.

The cutlets turn out very tender and juicy. Serve them hot with mashed potatoes, salad or any other side dish. When serving, you can decorate the cutlets with herbs, add sauce or gravy.

Out of the specified number of products, I got 16 cutlets.

Use oil with a high smoking temperature to lubricate the mold! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. Make sure that you use oil with a high smoke point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.

If you use ready-made spice mixes, be sure to read the composition on the package. Often, salt is already present in such mixtures, take this into account, otherwise you risk over-salting the dish.
