Add sugar and grind the ingredients with a whisk so that the sugar dissolves.

    Melt butter in a water bath or in a microwave oven, let it cool to room temperature. Pour the melted butter into a bowl with the egg mixture. Butter is the best product for making crumbly cookies, it has a low melting point and it contains animal protein. Mix the mass.

    Sift wheat flour, it needs to be saturated with oxygen, add baking powder and mix the dry ingredients well. For such cookies, it is better to use wheat flour, it contains protein, which makes the cookies crispy and toasty. Pour the flour mixture into a bowl with liquid and mix so that the dough gathers into a lump.

    Mix the dough a little with your hands to make a ball of elastic and smooth dough. We put it in a bowl. On the edges of the bowl, we pull the food wrap so that the dough does not curl. The bowl with the dough is sent to the refrigerator for half an hour. We take the rested dough out of the refrigerator. The dough will become even more obedient and elastic.

    We form a long thin sausage from the dough with our hands. We divide it into small pieces, roll them into balls. The dough is so obedient and does not stick to your hands at all, that you can do it without additional use of flour. We cover the baking sheet with parchment, lubricate it with butter (although this is not necessary), since the dough already contains it in its composition and should not stick to the parchment. Preheat the oven to 220 degrees.
