Choose a bowl for kneading dough - it should be large and deep. Pour sour cream and kefir, melted butter, egg yolk into it. Add salt and soda, mix. Sift flour into the resulting mass, knead a homogeneous elastic dough.

Peel onions and potatoes, wash under running water, cut into small cubes. Chicken fillet is washed, dried with a paper towel and also cut into cubes. We mix everything-mix, salt and pepper, taking into account our tastes.

Knead the dough, roll it out into a thin layer (about 3 mm thick). We cut out tortillas 15-16 cm in diameter (I do it with a saucer). We put the filling in the center of the circle and, lifting the edges, pinch the pie from three sides, thus a triangle with a hole in the center is obtained.

We spread the finished echpochmaks on a baking sheet lined with parchment and send them to the oven, preheated to 180 degrees, for 20-25 minutes. After that, remove the baking sheet from the oven and pour 1-2 tablespoons of broth into the hole of each pie (this will make the filling juicy).

Return the baking sheet to the oven for another 10 minutes. Do not rush to serve the pies on the table with the heat - the pies should lie down for at least 10 minutes.
