Financier is a French pastry. Necessarily almond, but it is possible with the addition of other components. Prepare a delicacy based on almond flour. The shape of the financier should ideally be rectangular, resembling gold bars. But in the absence of such molds, you can use the usual forms for cupcakes or muffins. They can be silicone or any other.

1. Melt the butter to a liquid state. To do this, we put it in a saucepan and send it to a low fire.

2. Then the oil needs to be boiled a little, literally 5-6 minutes, so that it acquires a beautiful golden hue and a nutty smell. Leave the oil for 20 minutes, let it cool down.

3. In a separate container, pour almond flour, add a little wheat flour here. We also pour powdered sugar.

4. Add a pinch of salt to the dry ingredients, pour the butter, mix.

5. Beat egg whites to a strong foam with an electric mixer.

6. In the resulting mass, we spread the egg whites, just not all at once, but in parts. Mix with a silicone spatula until smooth.

7. Fill the molds with dough so that they are filled with 2/3 of the total volume. Spread a couple of dried cranberries and almonds on top.

8. Place the molds on a baking sheet and send them to the oven. Bake the financier for 20-25 minutes at 160 degrees.

9. We check the delicacy for readiness. To do this, we either pierce it with a wooden toothpick or a skewer, if it comes out dry, it's done. Otherwise, you still need to bake and check again.

We remove the finished financiers from the molds while they are still hot, otherwise they may stick and it will not be so easy to get them later. You can serve it on the table when it is completely cooled.
