1. Sift flour and add vanilla sugar to it, sift powdered sugar and baking powder. If you do not want grains of vanilla sugar in the dough, take vanillin. Mix it up.
2. Mix the water with the oil and add them to the dry ingredients. Knead the dough.The dough should be elastic. You may need to add a little more water (1-2 tablespoons each) to achieve the desired consistency. After that, you can bake immediately, or you can let the dough lie for 0.5 hours in the refrigerator - then it is easier to work with it.
3. Dust the table, roll out the dough, cut out circles with a glass and bake - 180 degrees and 10 minutes. If the cookies are thick, then reduce the temperature to 160 and bake until ready.

PS The texture of this cookie depends on its thickness. Thin it looks like a cracker - it breaks and crunches, and thick - a little stringy inside with a crispy crust. You can also dip such cookies in sugar before putting them on a baking sheet. In this case, you do not need to put powder in the dough, otherwise it will be too sweet. You can also add salt to such cookies and dip them in a mixture of dried herbs - you will get very tasty crackers for soup or crunch like that. To make the cookies even faster, cut it not with a glass, but with a knife into lozenges - so there will be no scraps, which then need to be rolled again.
