As you know, to prepare a delicious dessert of American cuisine – cheesecake, you need a special cheese. But it doesn't always work out to buy one. For example, I have been making cheesecake from cottage cheese for a long time, not from cheese. The taste of it turns out to be very decent. I found the recipe a long time ago on some website, I don't remember which one. Over time, I adjusted it for myself.

First, we grind both cookies and peeled walnuts in a blender. An almost homogeneous bulk mass should be obtained. Now this mass needs to be mixed with melted butter and mixed well.

We take a round shape and line it with parchment paper so that it is easy to pull out the cheesecake after. Well, or you can take a split form.

At the bottom of the mold, carefully spread the mass of cookies and nuts, level it. You can, in principle, make bumpers, but I never do them. Cottage cheese cheesecake looks better without bumpers.

Now we put the mold in the refrigerator and make the filling.

We put the cottage cheese in a bowl, add sugar and rub it well. We put sour cream. And mix until smooth and lush. You can do this in a mixer.

We drive in one egg at a time. And whisk again.

Pour the zest from half or from a whole lemon, mix.

Pour the filling into the mold and put it in the oven for an hour at a temperature of 170 degrees.

Cheesecake needs to be checked periodically, because it bakes at different speeds in different ovens.
