Cooking traditional Balkan moussaka will not work quickly! Therefore, if you decide, get ready to spend a lot of time, food and effort.
1. Cut the eggplant, sprinkle with salt, remember and, after letting it stand a little, rinse and squeeze. Fry in an almost dry frying pan.
2. Cut the potatoes into slices. Boil it slightly so that it is firm.
3. Cut tomatoes into cubes, removing the skin, and onions.
4. Put the minced meat in a frying pan after the eggplant and fry it lightly, kneading it into small pieces.
5. Add the wine, onion and tomatoes and simmer until the liquid evaporates. Add salt and cinnamon. At the end, add the chopped parsley.
6. Cook the bechamel: fry the flour in butter and, adding milk, bring to a boil, season with salt and nutmeg. Cool and add the eggs beaten with a fork. Mix the dressing.
7. Put a layer of potatoes in the mold, a layer of eggplant on top and then a meat layer.
8. Pour the sauce and put it in the oven for 40 minutes at 200 degrees.
Before serving, the moussaka is slightly cooled, sliced and served.
