Cake with irga

Prepare a delicious berry pie with meringue for tea. Cake with irga is a combination of a thin base of shortbread dough, an abundance of berry filling and protein meringue. Pies of this kind are best baked in a split form, it is easy to extract the pie from it without damaging its integrity. Berries can be used both fresh and frozen. In the second case, the IRG must be pre-thawed and the liquid drained.

Cooking method

1.My berries are divided into two parts, one of which is crushed with a blender. Add condensed milk to the crushed berries, break eggs, pour starch, as well as spices: nutmeg, cinnamon, vanilla and cardamom, whisk with a blender. In the resulting mass we spread whole berries, mix.

2. We cut the butter into thin plates, pour flour into the butter, grind it into crumbs with our hands. Then add the chicken yolks, sour cream, pour sugar and salt. Knead a thick dough, send it to the refrigerator for 20 minutes. 

3. In a mold with a diameter of 25 cm, we spread the dough, level it, form the sides. On the resulting base, we spread the filling from the irga, send the mold to the oven preheated to 180 degrees, bake for 30 minutes.

4. Beat egg whites with powdered sugar to stable peaks, fill the cooking bag with cream, thickly put small meringues on the surface of the pie. Return the mold to the oven, raise the temperature to 200 degrees, bake until a golden blush appears.

Let the pie cool down, then remove it from the mold and serve it on the table.
