Cooking method

1. Divide the eggs into whites and yolks, beat the yolks with sugar using a white mixer.

2. In the resulting lush mass, sift flour with starch, gently mix with movements from top to bottom. Then sift the cocoa powder, mix again.

3. Whisk the proteins with a mixer to strong stable peaks, put them into the dough in parts, mix well each time.

4. The baking sheet (large, 20 * 30 cm) is lined with parchment, spread the dough, level. Bake the sponge cake in the oven preheated to 180 degrees for 10 minutes.

5. Pour gelatin into the hot milk, mix until the crystals are completely dissolved.

6. Honey is melted in the microwave to a liquid state, combine it with condensed milk, mix.

7. Cream is well cooled, whipped until fluffy with a mixer immediately at a minimum speed, gradually increasing it.

8. Combine the condensed milk-honey mixture with whipped cream, pour gelatin diluted in milk, mix gently.

9. We send the cream to the refrigerator for 10 minutes so that it thickens, cut the biscuit in half.

10. We spread the whole cream on one part of the biscuit, cover it with the other part, and send it to the refrigerator for 20 minutes.

11. Cut the biscuit into four strips, lubricate with pre-melted chocolate.
