Veal with eggplant potatoes and other vegetables

Very tasty combination of ingredients, appetizing and satisfying! Meat with eggplant and potatoes can be served both for lunch and dinner. You can take absolutely any meat for cooking, you can also improvise with vegetables. In addition, you can serve sauces, fresh vegetables and herbs.

Cooking method

Cooking time: 3 h

1. Wash the veal, cut it into medium-sized pieces, put it in a bowl.

2. Put mustard in a separate bowl, pour soy sauce and sunflower oil, add ground black pepper, salt and coriander, mix.

3. Pour the meat with the resulting marinade, squeeze the pre-peeled garlic through a press, send it after the marinade, leave the meat to marinate in the refrigerator for at least an hour.

4. Meanwhile, wash the eggplants, cut into circles about 0.5 cm thick, put them in a bowl, sprinkle with salt and leave for half an hour to remove their inherent bitterness.

5. Peel the potatoes, cut into thinner circles, spread on a dish, sprinkle with dried basil and add half the sour cream, mix.

6. Carrots are cleaned, washed, three on a coarse grater. Peel the Bulgarian pepper from the seeds, cut into small pieces.

7. The bottom of the baking dish is greased with sunflower oil, spread part of the eggplant on the bottom of the mold, sprinkle with grated carrots, then spread the meat and cover with a layer of potatoes, then put the remaining eggplants. Lightly lubricate the surface with sour cream, lay out pieces of pepper, sprinkle with grated cheese.

8. Cover the mold with foil, send it to the oven, preheated to 190 degrees, bake for 50 minutes, then remove the foil and continue baking for another 25 minutes.

We serve the dish hot, very tasty with fresh vegetables.
