    Break the eggs into a bowl in which you will beat. For charlotte, I always beat eggs in a measuring cup for 1 liter. Now eggs by volume at around 200 ml. important: The dishes in which you will beat the eggs must be dry, the eggs are only from the refrigerator.

    Start beating eggs at a low speed, gradually increasing it to the maximum. After 3 minutes, without stopping whipping, add a few drops of lemon juice. Continue whipping into a thick foam, until the mass increases 3 times. The weight is now at around 600 ml important: When whipping, it is advisable not to touch the walls of the dishes with the whisk of the mixer / blender, otherwise the mass will fall off after whipping.

    Continuing to beat, pour sugar gradually in a thin trickle, beat for about 5 minutes more. The mass will increase a little more in volume. Now the mass is at around 800 ml.

    Then gradually, in small portions, continuing to beat, pour in the flour. Beat until smooth. The mass will decrease slightly in volume - do not be alarmed, this is normal) Now the dough is at around 700 ml.

    Grease the mold with vegetable oil, sprinkle with breadcrumbs.

    This is how a charlotte looks just before baking. The form should be sent to a preheated 180 gr. oven for 35-40 minutes. The charlotte is ready when it starts to lag behind the walls of the mold (I forgot to take a photo)))
