Cottage cheese cupcakes with orange

A quick and delicious dessert for breakfast or a friendly tea party. I like cottage cheese cupcakes, they taste more tender than usual. The filling will appeal to orange lovers, I'm just an amateur. It is especially pleasing that it takes very little time to prepare.

Step-by-step cooking

Cooking time: 40 min
  1. Step 1:

    Step 1.

The first step is to melt the butter so that it has time to cool down a little. You also need to grate the orange peel on a fine grater in advance.

  2. Step 2:

    Step 2.

    Beat eggs with sugar.

  3. Step 3:

    Step 3.

Add cottage cheese, melted butter and orange zest. Mix well.

  4. Step 4:

    Step 4.

Sift flour mixed with baking powder. It is better to do this in 2-3 approaches, adding flour in parts. After kneading the dough, we put it aside and start filling.

  5. Step 5:

    Step 5.

You need to disassemble the orange into slices and peel them from the films. Cut the slices into 2-3 pieces, the pieces should not be too large.

  6. Step 6:

    Step 6.

To make it easier to remove the cupcakes from the mold, you can grease it with a piece of cold butter and sprinkle with flour. First, fill each mold by half: put about one tablespoon of dough. Then lay out the orange slices on top. And finally, "cover" the slices of fruit with the remaining dough.

  7. Step 7:

    Step 7.

Preheat the oven to 180 degrees. The baking time is 20-30 minutes, depending on the size of the cupcakes and on the oven. The smaller the cupcakes, the faster they will bake. In any case, it is better to check the readiness of cupcakes with a knife or toothpick.

The number of cupcakes depends on the size of the molds. If you take small ones, as for cupcakes, you will get 10-15 pieces. My form is larger than the standard one, it turned out 6 rather large cupcakes.
