Prepare the dough. It's very simple – mix all the ingredients for the dough. Pour flour, salt, sugar into a cup, rub with softened butter. Pour in cold water, knead the dough in a cup.

  3. Step 3:

    Step 3.

This amount of ingredients is enough to knead the dough of the desired consistency. Dust the table with flour and knead the dough well with your hands. At first it will crumble, continue to knead the dough, but then the butter will combine with the flour and the dough will become homogeneous.

  4. Step 4:

    Step 4.

Put the finished elastic dough in a cellophane bag and send it to the refrigerator for 1 hour.

  5. Step 5:

    Step 5.

In the meantime, let's do the stuffing. I wash the cherries, then cut them in half and remove the bones.

  6. Step 6:

    Step 6.

Drain the excess juice from the cherries, put it in a saucepan, put it on medium heat, add water – an incomplete glass.

  7. Step 7:

    Step 7.

From the moment of boiling, cook the cherries for 10 minutes.

  8. Step 8:

    Step 8.

In a separate bowl, mix sugar with starch. Pour this mixture into the cherries and mix well. Cook, stirring, for another 5 minutes, so that the filling thickens. Then we leave it to cool down, you can put the cup in cold water for a quick cooling.

  9. Step 9:

    Step 9.

We take the dough out of the refrigerator, cut off about a third of it, which will go to the basket.

  10. Step 10:

    Step 10.

The second part of the dough, which is larger, is rolled into a circle. We roll out a diameter larger than the shape to make the sides. My shape is 24 cm in diameter. Lubricate the mold with oil and spread the dough, pierce it with a fork.

  11. Step 11:

    Step 11.

Pour the cooled filling onto the dough.

  12. Step 12:

    Step 12.

Roll out the smaller part of the dough and cut into strips 1.5-2 cm wide. We put them first in one direction.

  13. Step 13:

    Step 13.

Then carefully lift the strips and lay out the strips perpendicular to the first one – we make a braid.

  14. Step 14:

    Step 14.

The remains of the hanging strips are bent along the edge of the mold, making a side.

  15. Step 15:

    Step 15.

Press the edge of the dough with the end of the fork and press it evenly to get a jagged edge.

  16. Step 16:

    Step 16.

Put the pie in a preheated oven to 180 degrees, bake for 40-45 minutes.

  17. Step 17:

    Step 17.

We leave the finished cake to cool.

  18. Step 18:

    Step 18.

Remove the cooled cake from the mold and cut it. Do not be alarmed if part of the juice is poured out with the first piece. The rest will catch in jelly and will not pour out when sliced. Have a nice tea party!
