Chocolate lemon Madeleines by Pierre Erme

An exquisite dessert with the aroma of chocolate and a hint of lemon. Most recently I came across recipes from the famous French pastry chef Pierre Erme. This is a very talented person, he gained special popularity thanks to the French macaroni liver. This is his favorite dessert, with which he constantly works and comes up with just incredible combinations. I can only hope that someday I will grow up to the recipe for his pasta, but for now I want to share with you a very simple, but so delicious recipe of Madeleine. They turn out to be very delicate, with the aroma of chocolate and with a slight hint of lemon. You can cook them not only with special molds, but also in simple cupcake molds.

Sift flour, cocoa and baking powder. Sugar is rubbed with lemon zest with your hands until the sugar becomes moist. Beat the eggs (quite a bit, I did it with a fork) and add to the sugar, whisk or whisk or mixer (at the lowest speed), until the sugar dissolves. Add the soft butter to the sugar-egg mixture and mix until smooth (I did it all with a mixer at low speeds).
Add the dry mixture and mix until smooth. We tighten the finished dough with a film and send it to the refrigerator. According to the author, it is best to keep the dough overnight, but if there is no time, then at least for 1 hour (I stood for an hour). Preheat the oven to 180 C, lay out the dough into molds (it turns out quite thick, in the refrigerator due to the oil it solidifies thoroughly) bake for about 12-15 minutes until cooked. We give Madeleine to cool down a little and you can drink tea or coffee) Bon appetit!
