Shortbread cake with jam

Delicious pie, will give home warmth in winter evenings. No problems, especially if jam or jam is at hand. Cooking time is 1 hour. It turned out two pies in shapes with a diameter of 21 cm . I didn't keep the dough for decorating the cake in the freezer for an hour. Excellent shortbread cake with jam, which is easy and quick to prepare. The shortbread dough is delicious, and you can choose any filling. I made it with jam from orange peels, jam from chokeberry (in principle, what kind of jam was that I used), with fresh apples with cinnamon. You can put less sugar if the jam is very sweet.

First heat the butter or margarine and let it cool. Beat eggs with sugar, add margarine, whisk.

Sift the flour with baking powder and vanilla and gradually introduce it into the egg-oil mass. Knead the dough, it should turn out to be not very cool.

Divide the dough into two unequal parts: put one third in the freezer for about an hour, and distribute two thirds evenly over the baking sheet. Spread the filling on top.

A smaller part covers the pie. You can grate it on a grater. But I prefer to roll it out, cut it into narrow strips and lay out the top of the pie with a grid. It turns out very beautiful!

Bake the pie at 190-200 degrees in a preheated oven for about 20-25 minutes.
