Lightly heat the milk, crumble the yeast into it, add 1 teaspoon of sugar and 2 teaspoons of flour. Knead the dough and let it come up for twenty minutes in a warm place. Pour the flour into a large bowl with a slide, and make a recess in the center. Put there 100 gr. sugar, egg, grated lemon zest, salt. We also pour out the sourdough there. Knead the dough. It is better, of course, to do this with a mixer, but you can also do it in a grandfather's way. Add butter and washed raisins, and mix everything well. On a board lightly sprinkled with flour, knead the dough lightly again until it is smooth and homogeneous. We form a ball from the dough, and put it in a bowl, cover it with a towel and let the dough come up within one hour. Grease the sheet with fat, and spread the dough on it with a tablespoon in the form of individual buns. Let them come up for another 20 minutes, and in the meantime, preheat the oven to 225 degrees. The buns are smeared with beaten egg and sprinkled thickly with sugar. Bake for about twenty minutes, until golden brown.
