Chocolate Sacher cake with apricot jam

The famous Viennese cake at your house - surprise the guests! What kind of food names don't exist? Some are euphonious to the Russian ear, some are not very. Like the name of this delicious chocolate cake. But I don't think it will make him any worse. The sacher cake recipe is very complicated and expensive. But, at least once in a lifetime, it's worth a try.

The baking dish should be at least 20 cm in diameter. Separate the yolks from the whites. Butter is mixed with 4 tablespoons of powdered sugar. Melt the chocolate with 1 tablespoon of water until soft, but so that it is not too hot. Mix the egg yolks with chocolate and a mixture of butter and sugar. Add 1 tablespoon of rum to the same place. Whisk the proteins into a strong foam with 30 grams of powdered sugar. Add the proteins to the mixture alternately with portions of flour. The resulting dough is carefully mixed and poured into a greased and floured form. Bake for about 50 minutes. Cooled and taken out of the mold, the cake is smeared with apricot jam. 
In a separate saucepan, we dilute sugar in 0.25 tbsp. water. Bring to a boil, and cook the syrup over low heat. Cool down a little. Melt the chocolate and pour sugar syrup into it. Add the melted butter and mix everything thoroughly. This glaze is poured over the cake. The thickness of the glaze should be equal to the thickness of apricot jam.
We send the finished cake to the refrigerator for a day. We serve it on the table with whipped cream.
