The most delicate, soft, curd cake for baking lovers! It's so nice when you go into the house, and you are greeted there by the delicious aroma of homemade food and especially sweet pastries. A lot of men just in words do not like sweets. My husband also says this all the time, while at the same time devouring the pastries I have prepared. Rub the butter and sugar well. Then beat in the eggs (one at a time). Rub the cottage cheese through a sieve twice and combine with the butter-egg mass. Using a fine grater, rub the zest from the lemon, then squeeze out the juice (scrolling the lemon pulp with a fork). Add the zest and half of the juice to the dough, then salt, sifted flour, soda, slaked with the second half of the juice and raisins. Knead the dough thoroughly. The cake pan (I prefer a deep rectangular one) is smeared with butter and sprinkled with crackers crushed in a meat grinder. Put the dough in it and put it in the preheated oven for 50 minutes (I check the readiness with a thin wooden stick). When the cupcake is ready, leave it to cool down a little and only then take it out of the mold.
