This food is typical of the Marina Alta region in the province of Alicante, although there are several cooking options. The culinary recipe that I want to introduce to you is rumored to come from the Reus Torres family. This dish is sometimes called "rice that went for a walk". Because sometimes it is cooked in baking ovens. A day before the start of cooking Arroz al Horno, do not forget to soak the peas.
Heat the oil in a pot, and fry the pieces of meat until they turn golden. Add red pepper, cut into four parts, and 2 grated tomatoes. Boil the water in a separate saucepan. In a frying pan with high edges, we put rice with saffron on the bottom, fried meat in tomato sauce on top. Soaked peas are placed between pieces of meat. Pour boiling water level with the products or slightly lower. We put the whole head of garlic on top, removing only the top peel from it, a tomato cut into rings. We check for salt and send it to the oven for 25 minutes.
If the water has boiled off and the rice is still raw, then you can add a little water. If the rice is ready, then leave the pan in the oven until a golden crust appears.
