I offer you a recipe for original Swedish pastries. You can bake individual buns buns, or you can make whole bread. If we make a pie with saffron, then it is necessary to take a 900 g cupcake mold and grease it with butter; we bake the buns on a baking sheet greased with oil. First, I soak saffron in milk for 5-10 minutes. In a bowl I mix yeast, flour, sugar and salt, and in the middle I make a recess. I add melted butter to the milk with saffron, and pour the mixture into a bowl. I add cottage cheese and knead the dough for 10 minutes on a surface sprinkled with flour. I shift the finished dough into a greased bowl, cover it with a film and put it in a warm place for 1.5 – 2 hours so that it rises, constantly kneading it. If I bake bread, then I shape the dough into a loaf and put it in a prepared form. I cover it loosely with a film and leave it in a warm place for an hour until the dough goes beyond the edges of the mold.
If I want to bake buns, then I divide the dough into 12 pieces, each of which I roll out in the form of a rectangle about 20 cm long. Then I twist them tightly into the shape of the letter S. I spread it on a baking sheet and cover it with a film. In order for the buns to rise, I leave them for 30-45 minutes.
While the rolls or bread are rising, I heat the oven to 220 C.. I lubricate the buns with yolk so that it does not drain onto the baking sheet, otherwise the pastry will stick. Bake for 15 minutes, then remove from the baking sheet and transfer to the grill.
To bake bread, I lower the temperature to 200 C and bake for another 20 minutes. I cool the bread on the grill. Bon appetit!
