Not so long ago, my collection of culinary recipes was replenished with a new kind of food. We are talking about almond cookies in Arabic — fekkas. It's hard to imagine an Oriental table without sweets. So now I delight my family with Oriental sweets from time to time. For the fekkas, beat the eggs with powdered sugar until a mixture of pale yellow color turns out. Add fat. It is not necessary to melt it. It is enough to hold it at room temperature until it becomes soft. Add butter and grated almonds. Grate an orange with lemon. The resulting fragrant zest is added to the rest of the ingredients. Mix everything well. Sift the flour and add it to the rest of the ingredients. Knead the dough. It is not necessary to knead for a long time. We form narrow bars from the dough 20 cm long, about 2 fingers thick. Bake the bars in a preheated oven at 180 degrees for about 20 minutes. During this time, they will change color. Ready-made hot bars are covered with a towel. After a couple of hours, we cut them obliquely with a thickness of half a centimeter. And we send the almost ready-made fekkas into the oven for another 5-10 minutes to get a golden crust. You can turn them over to another side for a uniform color. Fekkas is served cold. You can sprinkle with powdered sugar.
