Recipe for thin dough and sauce for Italian pizza

This pizza will be enjoyed by everyone without exception! This recipe has been with me for many years. And how many different pizza recipes have I tried... But this one is by far the most delicious! Very often I cook mini pizzas according to this recipe.

Step-by-step cooking

    Put the sourdough: add sugar, a pinch of salt, yeast and 1 tbsp flour to warm water. We put a bowl of sourdough on a bowl of hot water and cover with a towel. We are waiting until the foam appears. It will take about 15-20 minutes. Then pour the remaining flour, salt into a large bowl, add olive oil and pour in the sourdough. Knead the dough. Spread the dough on a floured surface and knead for 10 minutes, adding flour as needed.

    The dough should turn out plastic and pliable. Grease the dough with olive oil, cover with cling film and put in the heat for 1 hour, then knead and put on for another 1 hour. The dough after kneading is like this.

    When the dough is ready, divide it into two parts. (this is for two pizzas). Put a ball of dough on a floured surface and form a cake from it, rolling it in flour. We do this only with our hands!

    Prepare a baking sheet in advance, smear it with olive oil. Preheat the oven to the maximum temperature!!! You can put a bowl of water down the oven so that the bottom of the pizza does not burn. Now we form the basis of our pizza. If possible, we will not use a rolling pin. We will stretch the dough on our knuckles like true Italians!

    Stretch the pizza by turning the dough in a circle until you get a thin tortilla. (Well, if you fail, you can resort to a rolling pin)

    Now we are preparing the sauce. Onion and pepper cut into small cubes, fry in a frying pan until golden brown. Then add finely chopped tomatoes, stew everything thoroughly. Salt, pepper and add spices.

    Then whisk everything in a blender. Our delicious sauce is ready! No ketchup can compare, really! At least smear on bread and eat!

    We put our pizza base on a greased baking sheet and lubricate it liberally with sauce.

    Sprinkle with grated cheese.
