Let's start making a wonderful cake. New Year's cake, by the way, can be prepared not only for the New Year.

Beat softened butter at high speed, gradually add sugar without stopping the mixer. We introduce eight yolks one by one. Separately, whisk the proteins taken out of the refrigerator (10 pieces) into a strong foam, add a spoonful of sugar to them.

Carefully combine the yolk and protein masses. Mix them with a tablespoon of flour, continuing to beat. Pre-melted chocolate in a water bath, mixed with two tablespoons of water, pour into the dough, again whipping further.

Warm up the oven to 180 degrees and bake our dough in it for about forty minutes. After we let it cool down and cut it into two halves.

The bottom layer is soaked with a small amount of coffee liqueur, put back into the mold and pour jelly (any: berry or fruit).

It is better to add less water to the jelly than indicated on the package. We put it in the refrigerator for about three minutes. After carefully pressing into it smooth pieces of candied fruit (I take mango and papaya) and put it back in the refrigerator for half an hour.

We take it out, cover it with a second cake. The entire surface of the cake, together with the sides, is poured with melted chocolate in a water bath. Such food is served with hot black coffee or strong tea.
