Portuguese cuisine is rich in an abundance of garlic and tomatoes. Since Portugal used to be a poor country, they ate everything that was edible and appreciated the products very much. I really like the recipe for cooking eggplants, it's simple and delicious!

Cut small eggplants into 1 cm thick circles, pour boiling water over them and throw them on a sieve. After the water has run off, we leave it under the press for 20 minutes.
Chop the onion, pass it in oil, add chopped tomatoes, cut into halves, chopped garlic, bay leaf, thyme, salt, pepper, sugar and simmer until the sauce thickens (about 30 min). Then wipe through a sieve.
Eggplants are dried on paper towels, rolled in flour, and fried in lard.
Pour part of the sauce on the bottom of the pot, lay out slices of cheese, eggplant circles, cheese and eggplant again until the pot is full. Pour over the remaining sauce and sprinkle with a mixture of grated cheese, ground breadcrumbs, do not forget to sprinkle with oil and bake in the oven.
Serve in a pot.
