Pizza on yeast dough on mayonnaise

Such a delicious pizza will gather a huge company of close friends. I don't know if you know, but chefs don't like to share their recipes. There is an amazing pizzeria next to us. The pizza there is thin, crispy, the very memory of it makes my head spin. The cook agreed to tell me his culinary recipe only after I taught him how to make a real Ukrainian borscht with dumplings. Pizza is not just food, it is art and its basis, of course, dough. One of my favorite recipes is simple, fast and delicious. Despite the fact that yeast pizza dough is used here, it is very light and is made without hassle. The only requirement is to observe the proportions and the result will be guaranteed. The amount of dough is calculated for a frying pan or a small baking sheet. For a large baking sheet, make a double norm.

Mix dry yeast with half the norm of warm water, add sugar and let it stand for 10-15 minutes. In a separate bowl, mix salt and flour, making a recess in the center, carefully pour in the yeast and the remaining water. Mix thoroughly, rotating strictly in one direction, add oil and knead the dough well. Cover the dishes with a towel and put them in a warm place until the dough volume doubles. Then we knead the dough and let it stand for another 5-10 minutes. This is enough time for us to light the oven and cook the filling. Roll out the dough, spread it on a baking sheet greased with oil, pour ketchup mixed with mayonnaise, add the filling, tomatoes and sprinkle with cheese. Here I moved away from the original recipe. Cheese, as the cook explained to me, should be laid out under the filling - this is more correct, but I think that then tomatoes do not turn out so beautiful. As a filling, you can use one smoked sausage. But I like a richer filling, so I add mushrooms, corn, chopped olives. Bake in a preheated 180 degree oven for about 20 minutes. I recommend looking at it in 15 minutes, since all ovens are baked differently. The main thing is not to over-dry, as soon as the edge is browned - our real yeast pizza is ready. Sprinkle the herbs on top and enjoy!
