Wheat kutya with raisins

An old recipe for kutia - wheat with cherries. It's been done this way for centuries! I really wanted to make kutia the way it was made for centuries, and maybe thousands of years before our days: not from rice, but from wheat. I was surprised myself how beautifully it turned out, a real festive dish, just look at it! Wheat seeds turned out to be slightly transparent, light raisins - just a sight, like small carnelian. Boiled wheat is very interesting to eat - the texture of the food is unusual for us, elastic, probably useful for the jaws (and then, I'm sorry, for the "peeling" of the digestive tract). Poppy juice and honey give the wheat kutia a harmonious sweet taste. Dried cherries, on the contrary, bring a pleasant sourness.

Step-by-step cooking

Cooking time: 10 h
  1. Step 1:

    Step 1.

I cooked in a cast iron pot, but this, of course, is not necessary. I think, in general, it is possible to cook not in the oven, but also on the stove in a thick-walled saucepan

  2. Step 2:

    Step 2.

Soak wheat in water and leave overnight

  3. Step 3:

    Step 3.

Add dried fruits and nuts. I didn't have a lid for the pot, so I added a third measure of water. Cooked in the oven at maximum heat until the smell of "ready porridge" started. It took about an hour, but I think it's better to navigate by the smell, because the ovens are very different.

  4. Step 4:

    Step 4.

To prepare the sochiva - poppy milk, scald the sweet poppy with boiling water.

  5. Step 5:

    Step 5.

After 15 minutes, the boiling water is drained.

  6. Step 6:

    Step 6.

The poppy is pounded with a little cold water added

  7. Step 7:

    Step 7.

When white juice is formed, "poppy milk",

  8. Step 8:

    Step 8.

It can be filtered through the canvas

  9. Step 9:

    Step 9.

Poppy seed sauce can be used in lean nutrition and vegetarian cuisine
