Wash the fat, dry it, cut into pieces. Put the skin down on the board and make incisions 2-3 mm deep. Slice the finely peeled garlic and press it into the incisions. Do the same with two bay leaves.
Rub the other 2 bay leaves together with black pepper into crumbs, mix with cumin and salt (2 tbsp.l.) and sprinkle this mixture with lard. Mix paprika and pepper and sprinkle them with lard on top.
Now carefully wrap the lard pieces in foil and put them in the refrigerator for 2 weeks.
