Then carefully cut out these stalks so that the cabbage does not crumble in your hands. Halves of forks are cut across the veins into strips 2-2.5 centimeters wide, and then these strips are cut into squares.

    Carrots are washed under water, cleaned and cut into circles. Beets are thoroughly washed with a kitchen brush, peeled and also cut into small thin plates. Peel the garlic from the husk and cut into slices.

    Put the prepared vegetables in a large saucepan so that the layers of cabbage alternate with carrots, beets and garlic.

    Preparing the brine. Pour water into a saucepan, add sugar, salt, bay leaf, black pepper and peas. Stir and put the pan on the fire. Bring the brine to a boil, turn off the heat, pour in the vinegar and mix again. Let the brine cool down a little.

    Pour the vegetables laid in a saucepan with a slightly cooled brine. Cover the top with a plate and put it under a little oppression. We let the cabbage stand under the yoke for 2-3 days, then we put it in sterilized jars and roll it up. Most housewives prepare this snack in large volumes and arrange it in 3-liter cans. However, if the family is small, I recommend using small jars. It is necessary to store such a blank in a cool place.

Cabbage cooked according to this recipe in winter will be an excellent addition to many side dishes, for example: mashed potatoes, fried potatoes, buckwheat, many cereals. Also, such cabbage will be an excellent alternative to pickles for a glass of spirits.
