Light sandwiches in the microwave

Light but nutritious sandwiches are very good for breakfast! There are countless recipes for morning snacks, but cheerful sandwiches always evoke the same uninvited thought in me - about a steaming cup of fragrant morning black coffee and therefore inspire fun and joy in the mind that has not yet woken up. Sometimes this thought comes late at night, if suddenly I have prepared these wonderful light sandwiches for dinner, and I force myself to replace coffee with a glass of juice.

Pieces of black bread are literally half a minute heated in the microwave at medium power. While they are not too cold, I smear them with a thin layer of butter of moderate fat content. On top of the layers I sprinkle the products prepared in the evening: chopped yolk and white of chicken eggs and finely chopped basil. The coffee should be ready, because you need to hurry so that the bread does not get cold. All this is done very quickly, much faster even than telling a culinary recipe. I like to put a slice of ham on top and cover it with a thin piece of cheese, so that the ham literally shines through it. One of my friends, an incredible coffee lover, has a whole thick notebook with recipes for various sandwiches for coffee. She kindly rewrote some of them to me and now I also have a good selection of recipes for an easy morning meal. According to the mood, I replace black bread with white wheat.
