Lettuce leaves are washed and, pouring cold water, left for an hour - let them "come to life" and become more crispy.

We defrost the shrimps, rinse them under running water, remove the heads and shells, and put them in a bowl. Add salt, freshly ground pepper, honey, lemon juice, and olive oil. Mix everything thoroughly and leave to marinate for half an hour. Then we remove the shrimp from the marinade, dry it and fry it in olive oil for 2 minutes on each side (we determine readiness by color - the shrimp ceases to be transparent). Ready-made shrimp will wait in the wings on a platter).

Let's do the croutons. Pour olive oil into a bowl, peel garlic, finely chop, add to the oil. We insist the oil for at least an hour, after which we heat it in a frying pan (we leave only the oil, garlic in a bowl). Cut the bread into small cubes, put it in a frying pan and lightly fry in garlic oil. Then we move it to a baking sheet, salt, sprinkle with Provencal herbs and dry it in the oven at 180 ° C.

Prepare the sauce. To do this, boil the egg soft-boiled for 2 minutes, after which we quickly cool it in cold water. Break the egg and put it in a blender bowl, add all the other ingredients: mustard, Worcestershire sauce, lemon juice. Beat everything until smooth. Then, without interrupting the work of the blender, we introduce a mixture of sunflower and olive oils. At this stage, the mixture will thicken and resemble mayonnaise. Chop the anchovies finely, add to the sauce, mix everything until smooth. You can add salt and pepper - everything to taste.

Lettuce leaves are dried with paper towels, torn into arbitrary pieces, put in a bowl, pour a little sauce, mix. Tomatoes are washed, cut in half. Parmesan finely three.

We are preparing the plates in which we will serve the salad. Rub them with garlic, spread salad leaves from a bowl, chopped tomatoes, fried shrimp. Pour the sauce, sprinkle with grated parmesan and spread the crackers (about crackers - add to the salad right before serving, so that they do not get wet).
