Cooking method

Cooking time: 120 d

First we prepare the starter: 200 g of cranberries and 2 tbsp. sugar for this we will need. Do not wash the berries!!! we need wild yeast, which is on the skin of berries.
Put the cranberries in a 3-liter jar, add sugar and put away for 10 days in a warm dark place. The mixture should ferment.

Now pour the whole berry into a 10-liter dish. Pour sugar over the berries. Pour cold water and put away for 5 hours in a dark warm place, periodically approach and stir to dissolve the sugar. Stir with a wooden spoon. Then pour the leaven into the future wine, mix. Put a water shutter (special) on the jar. If there is no such thing, then just a rubber medical glove. The wine will be prepared for 1-2 months. But you need to check it regularly after 1 month.
The wine will be ready when the gas stops being released violently, and the glove will deflate. At this point, the wine must be carefully separated from the sediment - to do this, drain it through a rubber hose or through a filter. Then strain the wine and bottle it. Seal and remove to a cool place, where to keep for 3 months. The wine will ripen this time. And it's better for six months!
Both fresh cranberries and frozen berries are suitable for this recipe.
