    Zama - Moldovan national soup. It's just incredibly delicious!!! The most important component of this soup is sour bran kvass. Unfortunately, it is not sold in Russia, but there are a lot of recipes for its preparation on the Internet. My relatives from Chisinau send me such a dry one in bags. You can replace it with citric acid, but I can't say exactly the proportions, try 0.5 tablespoons per pan. It won't be enough to add a little more to your taste.

    Wash the chicken, cut it and put it to cook. I'm skinning the chicken. Let's make noodles. In a bowl, beat only the protein of 1 egg. Add salt. You can do it on the whole egg, but then there will be a lot of noodles. But it can be left for another 1 soup. Knead the steep dough. In no case do not add water!!! Only on the egg!!! Leave to rest.

    Check the chicken in the pan. Remove the foam, turn down the heat so that the broth is transparent and add 1 leaf of lavrushka and 7-10 peas of black pepper. You can grind the pepper in a mortar, you can throw it whole.

    Cut all the vegetables into strips. The thinner you slice, the more beautiful the soup will be. The thickness of the slicing does not affect the taste in any way!))) Tomatoes, before slicing, pour boiling water and remove the skin, but if it does not "confuse" you, you can not do this.

    When the meat is completely cooked, throw onions, carrots and celery root into the pan, all at the same time. While it's cooking, we'll make noodles.

    Roll out the dough thinly, 1 mm thick. Cut strips 4-5 cm wide and cut into thin noodles.

    Scatter the noodles on the table and leave for 10 minutes to dry a little.

    While making noodles, the vegetables were cooked. Add the peppers and tomatoes. I do not throw away the stems from the greens, but finely chop and add them to the soup at this stage.

    Put the noodles in a sieve or colander and shake well to remove excess flour.

    Put the noodle pan on the fire. Add salt to the water and, as soon as it boils, throw the noodles. As soon as she starts the foam, turn it off and let it lie in this water for 7-10 minutes. Flip into a colander and rinse under cold water.

    Add boiled noodles, herbs and sour kvass 1 tablespoon. The soup will get a little cloudy, don't worry, that's the plan.))) If there is not enough liquid, add boiled hot water. Add salt and let it boil for 5-7 minutes.

You can cook without noodles, only with vegetables, BUT do not add potatoes in any case!!!
You can add sour cream, and if you have a hangover, then eat hot zamu with hot pickled pepper.
Moldovans have such a tradition, the next day, after the feast, the host invites everyone who walked with him at the celebration - to the zamu, i.e. to the opohmelka!)))
