Classic pork kharcho

A wonderful dish for connoisseurs of Georgian cuisine. My husband loves spicy and kharcho soup is in the forefront of his favorite dishes. I also don't mind a rich, fragrant, spicy soup with meat. Georgians prefer to cook lamb or beef kharcho, and I suggest making a small exception to the rules and cooking a pork dish. Try it, it's so delicious!

Cooking method

Cooking time: 2 h 10 min

1. Pork is washed under running water, cut into portions. Put it in a saucepan, pour cold water and cook until fully cooked.

2. Peel the onion, cut into small cubes, fry in sunflower oil until transparent, then spread in broth.

3. Wash the rice 3 times, until clear water, and also put it in the broth.

3. Tomatoes are washed, scalded with boiling water, remove the skin. Cut the tomatoes into small cubes.

4. Walnuts are crushed with a blender.

5. We put the prepared tomatoes in the broth together with tomato paste, cook for 15 minutes.

6. At this stage, add salt, prepared nuts, tkemali sauce, finely chopped parsley, crushed garlic, bay leaf and hops-suneli. And also do not forget about red and black peppers (the dish is spicy), paprika and chili pepper. We wait 5 minutes and remove the pan from the heat.

Kharcho soup can be served on the table!
