Do you have a student in your family? And if your student studies far from home, then each of his visits is a headache – what to give to a child so that, God forbid, he does not starve. For two years I have been looking for cooking recipes that would make life easier for my child away from home, well, at least in cooking. And so I found a very interesting recipe for harvesting: borscht for the winter.
Everything is prepared for 20 cans with a capacity of 0.5 liters. Peel the tomatoes and chop them finely. Peel the beets and cut into strips. Lightly fry it in half the vegetable oil in a deep frying pan. Close the lid and simmer until soft, 10 minutes, under the lid on low heat.
Cut the pepper into strips, and the onion into half rings. Cut carrots and parsley root into the smallest strips, chop cabbage. Now mix all the vegetables together, don't forget about beets – it's borscht, add parsley, salt, sugar, spices and leftover oil. Mix everything well and simmer under the lid for 40 minutes. Be sure to mix – it has the property of burning. 5-7 minutes before the end – add vinegar. Place the workpiece in sterile jars, roll up and wrap up. In winter, your offspring will only need to peel and cut potatoes, add 2-3 tablespoons of borscht from a jar, boil for 5 minutes and a spoonful.
