Zucchini pancakes with semolina

Very fast, very simple, very easy, for every day! Pancakes made from zucchini with semolina are lush, tender and very tasty. They are easy to cook and fry - just spread the zucchini mass with a spoon directly into the pan. Serve pancakes with sour cream or any unsweetened sauce for breakfast!

    How to make pancakes from zucchini with semolina? Prepare the products according to the list. Zucchini is preferable to take young, with tender skin and seeds. If you have old zucchini, peel them from the skins and seeds. And weigh them already cleaned. Take any vegetable oil, but refined. Wash and dry the young zucchini and egg.

    Cut the ends off the zucchini. Grate the zucchini on a grater (young ones - right with the peel). If they are young, rub on a large one, if old, it is better to use a fine grater.

    Squeeze the squash mass with your hands, drain excess moisture.

Pancakes with semolina cooked for the first time, usually I make them with the addition of flour. It turned out really much more tender than usual, while they were not as soft as with flour. We really liked it!
You can add a lot of chopped greens to such pancakes, it will not only be delicious, but also beautiful. If you like the taste sharper, you can put onion grated on a fine grater or crushed garlic. Grated hard cheese will enrich the taste of pancakes.
Squash pancakes are served most often with sour cream or yogurt, but you can also make garlic or cheese sauce for them, some prefer to eat them with mayonnaise.
The most delicious pancakes are obtained from young zucchini at the height of the summer season. Add grated young carrots or potatoes to the dough - you will get wonderful vegetable pancakes. By the way, this is a great way to feed children with vegetables. For baby food, fry pancakes without oil in a non-stick frying pan. Cook them under the lid on low heat - then the vegetables will be well cooked and will not crunch. For children, rub everything on a fine grater.

Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
