    Prepare all the necessary products. Salmon is a noble fish and the key to a delicious dish is fresh natural fish. Of course, it is best to take fresh chilled fish (the freshness of the fish can be checked by the color of the gills - they should be pink). Also, the fish should be elastic and when pressed with a finger, it should straighten out quickly enough. The oil can be any vegetable, but it must be refined, otherwise the oil will burn.

    Wash the fish well and be sure to dry it with paper napkins. Otherwise, when frying in oil, there will be a huge amount of splashes. Make sure that there are no water droplets on the fish. You can take a salmon steak, or a ready-made salmon fillet, but always on the skin. If there is no skin, then the fish will not keep its shape and will simply fall apart into small pieces.

    Salt the fish. I recommend using coarse sea salt. Leave the fish for 5 minutes so that the salt dissolves and the fish is salted.

    Sprinkle the fish with pepper. I use white pepper with lemon flavor, but you can take any ground pepper: black, red, fragrant. I believe that a fish like salmon does not need a lot of seasonings - its taste is already amazing. But everyone has their own preferences. Therefore, if desired, it is quite possible to add some of your favorite herbs and seasonings. From herbs, I would recommend thyme, tarragon and dill.

    Pour 1 tbsp vegetable oil over the fish. Spread the oil over the whole piece of fish.

    Leave the salmon to marinate for literally 10-15 minutes, but it can be longer: the marinating time can be increased even to 1 hour.

    Heat the vegetable oil well in a frying pan. The oil must be very well heated, otherwise the fish may stick to the pan. If you are frying salmon fillets on the skin, first fry the fish from the skin side. Cook over low heat. The fish is cooked quickly, so 7-10 minutes on each side will be enough.

    Gently turn the fish over, and bring it to full readiness on the other side.
