Step-by-step cooking

Cooking time: 1 h
  1. Step 1:

    Step 1.

How to make a miracle with cottage cheese? Prepare the products. Pre-sift the flour. Let there be a lot of greenery, you can take any of it: cilantro, spinach, sorrel, nettle, whatever you find. I found only dill and parsley. If the greens have an active taste, take it smaller. Choose high-quality cottage cheese, without additives, the fatter, the tastier the cakes will turn out.

  2. Step 2:

    Step 2.

Prepare the dough. How to make dough? Take a bowl, pour flour into it. Add salt, oil and water, knead the dough. I first stir in the bowl with a spoon, then continue on the table. Flour may need different amounts, look at the condition of the dough.

  3. Step 3:

    Step 3.

Knead the dough until smooth, smooth, I still like to beat it on the table.

  4. Step 4:

    Step 4.

Now let the dough rest for at least twenty minutes. During this time, the flour will absorb all the water and form gluten, which will make it easy to work with the dough. Put the dough in a bowl, sprinkle with flour and cover with a towel. You can also wrap it in a film and leave it right on the table.

  5. Step 5:

    Step 5.

While the dough is resting, prepare the filling. How to make the filling? Put the cottage cheese in a bowl and mash it with a pusher.

  6. Step 6:

    Step 6.

Rinse the greens well, dry and finely chop.

  7. Step 7:

    Step 7.

Add herbs, soda and salt to the cottage cheese, mix. The filling is ready.

  8. Step 8:

    Step 8.

Meanwhile, the dough is also ready to work. Divide it into balls the size of a table tennis ball.

  9. Step 9:

    Step 9.

Roll out each ball with a rolling pin into a circle 2-3 mm thick. I roll it out on a flour-dusted board, you can lubricate the surface with a small amount of vegetable oil instead of flour.

  10. Step 10:

    Step 10.

Put a dessert spoon of filling on one half of the dough, level it with a thin layer, retreating a centimeter from the edge.

  11. Step 11:

    Step 11.

Cover with the second half of the dough. Pinch the edges with a fork, as shown in the photo.

  12. Step 12:

    Step 12.

I advise you to make blanks from all the dough before baking our miracle.

  13. Step 13:

    Step 13.

Heat the frying pan well over medium heat. Spread two tortillas on a dry frying pan, without oil!!!

  14. Step 14:

    Step 14.

When one side begins to blush, turn over to the other. Fry miraculously fast, two minutes on each side will be enough.

  15. Step 15:

    Step 15.

Put more hot tortillas on a plate and brush with butter liberally. Serve immediately, hot and buttery. Enjoy your meal!

The filling for the miracle is taken most often salty - potatoes, meat, pumpkin, herbs, cheese and, as in this recipe, cottage cheese.

To cook the miracle with meat, take minced meat with onions as a filling. The cooking time should be increased. For the filling of potatoes, it must be boiled and made a thick homogeneous puree, you can add grated cheese.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!

It is important to sift the flour to saturate it with oxygen. Then the baking will turn out to be airy and will rise well when baking.

For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
