We put a saucepan or a small saucepan on medium heat, pour in 40g. olive oil and when the oil is heated, pour the red onion sliced with feathers into it (fry until the onion becomes soft). From half an orange and lemon we make fresh (freshly squeezed juice), pour into the onion, add orange jam, salt, pepper, a sprig of rosemary and simmer for 15-20 minutes. on low heat (until the onion is completely soft). At this time, we heat the grill pan (for those who do not have a regular frying pan, but it turns out better on the grill), pour in the remaining oil, a sprig of rosemary and fry until ready in a frying pan.
When serving, put the pork on a plate and pour the sauce on top. According to my taste, for those who follow the figure or for some reason do not like pork, you can replace pork with chicken breast.
