Stuffed peppers with minced meat, rice and cheese in a slow cooker

Wash carrots, peel, rub on a coarse grater. Peel the onion and finely chop it. Also wash the tomatoes, dip them in boiling water for a couple of minutes (do not forget to make a cross-cut on them beforehand), remove the skin. Then cut them in half, remove the stems.

Pour oil into the bowl of the slow cooker. In the "Frying" mode (for those who do not have - "Baking"), heat the oil, put the onion in it. When it is fried, add the carrots. Continue to fry for 5 minutes, then put the tomatoes, cut into pieces. Simmer the mixture for 10-15 minutes.

At this time, you can do the stuffing. Put the minced meat in a bowl. Rinse the rice in seven waters, add it to the minced meat.

Put half of the fried vegetables in a bowl with minced meat and rice. Add salt and spices, mix everything thoroughly.

Wash the peppers, cut off the caps with the stems, remove the seeds. Fill the prepared peppers with minced meat, then put them in the bowl of a slow cooker with the remaining vegetables. Put them stuffing up tightly to each other.

Now let's move on to the sauce in which the peppers will be cooked. Put sour cream, salt, pepper in the water. Mix everything well.

Pour the sauce over the peppers in the bowl of the slow cooker, add a bay leaf. Chop the garlic and herbs finely, put them in a bowl as well.

Close the lid of the slow cooker, turn on the "Baking" mode for 1 hour.

The peppers are ready! But if you want a nice cheese crust on top, you need to rub it, put it on top and put the peppers in a preheated oven for 5 minutes. You can also do this if you need to reheat the peppers (in this case, keep them in the oven a little longer).

Serve the finished pepper to the table with your favorite sauce, for example, ketchup. Also, this dish is perfectly combined with sour cream.
