Let's start with potatoes. Potatoes for draniki are taken from yellow crumbly varieties, because this particular variety is not as watery as the others and is suitable for draniki in taste. If the juice is released, then you just need to squeeze it out, but do not add flour, since real draniki are prepared without flour. Potatoes for draniki should be ground to a mushy state using a food processor or on a grater for mashed potatoes. The composition of the pancakes does not include onions and peppers. These were the basic tips, and now the cooking itself.

Grated potatoes need to be thrown back on the drushlag (mesh) so that the excess juice will stack. Add eggs and salt to the mass, mix. For frying, you need to use a frying pan with a thick bottom (cast iron). Fry the pancakes in vegetable oil. Classic draniki are served with sour cream, but for originality, you can mix cranberries with sugar and sprinkle draniki. It is also very tasty with sweet applesauce.
