    Dough. Activate yeast. In 1/2 cup of warm milk, add yeast, 2 tablespoons of sugar and, stirring, put in a warm place for 10-15 minutes. If a yeast cap has formed, you can knead the dough.

    Sourdough. Add a glass of sifted flour, the remaining milk and sugar to the yeast. Knead, adding another 1 cup of flour.

    Sprinkle the finished dough with flour on top, cover with a towel and put in a warm place for 1.5 hours.

    Mince. Pass the meat through a meat grinder along with onion and garlic. Soak the bread in a small amount of milk and add to the minced meat. Knead the minced meat well, add salt and pepper. Pour kefir. Knead again. The minced meat as a result is homogeneous, lush and juicy.

    Melt butter, cool. Separate the whites from the yolks of the eggs. Whisk the whites with salt until fluffy. After 1.5 hours, get the dough and add the melted butter, yolks, flour to it. Knead the dough well, and add the whipped whites to it, it should become elastic and freely lag behind the walls of the mold. Cover with a towel again and put in a warm place. When the dough increases in volume by 2 times, you need to knead it and let it rise again.

    Sprinkle the table with flour, tear off a piece the size of a nut from the dough, knead it with your hands into a flat cake. Put the minced meat in the middle. Form the whites by lifting the edges of the dough up around the filling, leaving a small hole on top. In a frying pan with preheated vegetable oil, carefully put the whites with a hole down. Fry on medium heat, you can turn it over only once.

    Put the finished whites on a dish and cover with a towel.

Belyashi - dreamily close my eyes, remembering my mother's fabulous belyashi. Even chebureks are not able to compare with this culinary masterpiece.
